Zucchini Puff Pastry

The zucchini puff pastry is a super quick, tasty, and clever recipe that you can make in 5 minutes with only 2 main ingredients, baked in the oven. I had some zucchinis to use up and thought of making this kind of savory slab made only with grated zucchinis and cheese (plus a pinch of salt and a drizzle of oil, if you like) to make it more flavorful and crunchy. The zucchini puff pastry is a vegetarian and gluten-free dish perfect even for kids, it’s light, tasty, and nutritious, perfect as an appetizer or main course, my daughter often asks me to make it, she loves it!

Ingredients

  • 1.1 lbs zucchinis (already cleaned)
  • 1 cup grated Parmesan cheese
  • 1 pinch salt
  • 1 drizzle extra virgin olive oil

Steps

  • The zucchini and Parmesan puff pastry is super easy and quick to prepare, first, clean the zucchinis, grate them with a coarse grater (the one you use for shaving cheese), season them with a pinch of salt (really just a pinch, but it’s optional; if you eat less salty foods, you can easily skip it, as the cheese is already quite flavorful) and squeeze them well, they must lose their vegetation liquid and remain very dry.

  • Mix the zucchinis and the grated Parmesan cheese, transfer the mixture into a non-stick baking pan (if it’s not non-stick, grease it with a drizzle of oil) and level it well, the layer should be thin.

  • Drizzle a bit of extra virgin olive oil on top (again, you can omit this, but with it, the zucchini puff pastry will be more golden, crunchy, and tasty) and bake the zucchini puff pastry in a preheated oven at 392 degrees Fahrenheit for about 25 minutes, it should be nicely golden.

Notes:

The zucchini puff pastry keeps at room temperature for a few hours or in the fridge for a couple of days. As mentioned, salt and oil are optional. You can use Parmesan, Grana, or any similar cheese to grate. You can also cook it in an air fryer at 392 degrees Fahrenheit for about twenty minutes.
