The baked chicken rolls are stuffed meat rolls, easy, quick, appetizing, and delicious. I had some chicken breast slices to cook and decided to make rolls filled with speck and scamorza, served with a nice salad. They saved my dinner and were a hit! Tender, tasty with a stringy filling, the chicken rolls are a true delight, a meat second course that disappears in an instant. They are too good!

Ingredients
- 1.1 lbs chicken breast
- 4.4 oz speck
- 5.3 oz scamorza
- to taste breadcrumbs
- to taste salt
- to taste black pepper
- to taste spices
- to taste extra virgin olive oil
Steps
The stuffed chicken rolls are super easy and quick to prepare. First, season the chicken breast slices with a bit of salt and a drizzle of extra virgin olive oil.
Put the breadcrumbs, black pepper, and spices to taste (I used rosemary, thyme, and oregano) in a small plate and mix.
Bread the chicken breast slices and fill them with a piece of speck and cheese, roll them forming rolls, and cut them in half.
Place the stuffed chicken rolls in a baking dish, drizzle some extra virgin olive oil on top, and bake them in a preheated oven at 392°F (200°C) for 20-25 minutes, until slightly golden.
Notes:
The stuffed chicken rolls can be kept in the fridge for a couple of days. You can also stuff the rolls with cooked ham or other cured meats of your choice, and you can use grilled vegetables as well. For this recipe, I recommend using thin slices of meat.
