I wanted to prepare simple and tasty treats for breakfast, so I thought of making muffins with coffee in the batter, perfect to start the day on the right foot. Delicious and butter-free, coffee muffins are made in just a few minutes and straight into the oven, they are little clouds to bite into, also perfect at the end of a meal!

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 3 oz coffee
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp unsweetened cocoa powder
- Half packet baking powder
- to taste vanilla
- to taste unsweetened cocoa and powdered sugar (for garnishing)
Steps
The super soft coffee muffins are very simple and quick to prepare. First, brew the coffee using a moka pot or coffee machine. Whip the eggs with the sugar until they become light and frothy, using an electric mixer.
Add the vegetable oil and mix. Then add the vanilla, coffee, flour, unsweetened cocoa powder, and baking powder. Mix well until all ingredients are combined and there are no lumps.
Fill the muffin liners with a bit of batter and bake the super soft coffee muffins in a preheated oven at 350°F for about 20 minutes. Do the toothpick test to check for doneness.
Remove the coffee muffins from the oven and garnish them with a mix of unsweetened cocoa and powdered sugar (or just one of them, if you prefer).
Tips:
The super soft coffee muffins keep at room temperature for 5-6 days. The cocoa is used to intensify and enhance the coffee flavor. You can use melted butter instead of oil. 3 oz of coffee is about 3 small cups, but weigh it to be sure.
