Ricotta and Apple Fritters

The ricotta and apple fritters are truly amazing treats that can be made in 5 minutes with a simple fork. I love apple desserts and I love those with ricotta, so I decided to make super soft fritters with ricotta and apple pieces in the batter, without butter or oil. They didn’t even last an hour! The ricotta and apple fritters are very soft, fragrant, and full of fresh fruit, ready in a flash, but I warn you, they are addictive, they melt in your mouth 😀

Ingredients

  • 8.8 oz ricotta
  • 1.6 cups all-purpose flour
  • 0.5 cup sugar
  • 3.4 tbsp milk
  • 2 eggs
  • 2 apples
  • 1 lemon
  • Half packet baking powder
  • to taste sugar and cinnamon for coating

Steps

  • Ricotta and apple fritters are super easy and quick to prepare. First, place the ricotta (which should be well-drained; if it’s fresh, let it drain before using), sugar, eggs, milk, a pinch of salt, and grated lemon zest in a bowl, and mix well with a fork.

  • Add the flour and baking powder, and form a smooth, lump-free mixture. Then incorporate the peeled and diced apples, seasoned with the juice of half a lemon.

  • Pour oil into a pan and heat it up. Scoop some batter with a spoon and drop it into the hot oil, frying the ricotta and apple fritters over medium-low heat until golden brown on both sides.

  • When cooked, drain the ricotta and apple fritters on absorbent paper and coat them, while still warm, in sugar and cinnamon (or just sugar).

Notes:

The ricotta and apple fritters can be stored at room temperature for a couple of days. If you don’t consume them immediately, don’t sugar them; they will keep better. You can warm them up and sugar them when serving.
