Broccoli Patties

The broccoli patties are simple, quick, and delicious vegetable croquettes, baked in the oven with a cheesy filling. I had some boiled broccoli to use up, and in just a few minutes, using only a food processor (or kitchen mixer), I made these delicious flattened meatballs, light and egg-free, which were a big hit even with Matilde. The broccoli patties are prepared in a few minutes and will disappear in no time, they are a vegetarian recipe that will make both adults and children happy!

Ingredients

  • 1.1 lbs broccoli
  • 1 1/4 cups scamorza cheese
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1/2 cup Pecorino cheese
  • 1 clove garlic
  • to taste salt
  • to taste black pepper
  • to taste extra virgin olive oil

Steps

  • The broccoli patties are super easy and quick to prepare, first clean the broccoli, detach the florets, boil them in salted water, and drain well.

  • Place the boiled broccoli in a food processor and add salt, black pepper, breadcrumbs, grated Parmesan and Pecorino, a clove of garlic, and blend everything together to achieve a soft and homogeneous mixture.

  • Take a bit of the mixture, flatten it on the palm of your hand, insert a piece of cheese, and close it to form a medallion.

  • Prepare all the broccoli patties in this way, place them on a baking sheet, drizzle with extra virgin olive oil, and bake in a preheated oven at 392°F for 20-25 minutes.

Notes:

The broccoli patties can be kept at room temperature for a few hours or in the fridge for a couple of days. I made them in a vegetarian version, but if you prefer, you can also use speck or cooked ham for the filling.
