Salmon and Avocado Couscous

Salmon and avocado couscous is a special no-cook cold dish. I love the combination of avocado and smoked salmon, and this recipe saves me many lunches. It’s ready in 5 minutes and requires no cooking, perfect for when I don’t have much time to spend in the kitchen or when we decide to go to the beach at the last minute. This couscous is fresh, nutritious, and delicious, also perfect as an appetizer or for a happy hour 😀

Ingredients

  • 1 cup couscous
  • 1 cup water
  • 5.3 oz smoked salmon
  • 2 avocados
  • 2 tablespoons extra virgin olive oil
  • 1 sprig mint
  • 1 sprig basil
  • 1 lemon
  • to taste salt
  • to taste black pepper

Steps

  • • Salmon and avocado couscous is super easy and quick to prepare. First, clean the avocados, cut them in half, remove the pit, and peel them by inserting the spoon between the flesh and the skin. Then cut them into small pieces.

  • • Put the couscous in a bowl, add hot water, stir quickly, and cover with a lid or a cloth. In 4-5 minutes, the couscous will absorb the liquid and “cook itself.”

  • • Fluff the couscous and dress it with lemon juice, oil, chopped mint and basil, avocado, smoked salmon cut into small pieces, a bit of pepper, and mix all the ingredients well.

  • • The couscous is ready; you can enjoy it immediately, or better, let it rest in the fridge for at least 30 minutes before serving, so it will be nicely flavored.

Notes:

Salmon and avocado couscous can be stored in the fridge for a couple of days.
