The sweet omelette is an easy, quick, simple, and delicious South Tyrolean (Tyrolean) recipe. I’ve been wanting to make it for a long time, I had a lot of eggs to use up and I finally decided to make it for Sunday breakfast. We devoured it! The sweet omelette is soft and tasty, made with few ingredients and raisins that make it even more delicious, it gets slightly caramelized at the end of cooking (if you don’t like it, you can omit it) and is served with a dusting of powdered sugar and blueberry or red berry or forest fruit jam, it’s nutritious and tasty, great as a snack as well, and will be loved by both adults and children!

Ingredients
- 1 cup milk
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup butter
- 1/3 cup raisins
- 2 tbsps rum
- 4 eggs
- 1 pinch salt
- 1 tbsp sugar
- to taste vanilla
Steps
The sweet omelette is very simple and quick to prepare, first soak the raisins in rum to rehydrate them. Beat the eggs with the sugar and a pinch of salt until they become light and fluffy.
Add the milk, flour, vanilla, and mix everything together, then incorporate the well-drained raisins.
Put the butter in a pan and let it melt completely, then pour in the sweet omelette batter, cover with a lid and let it cook for 4-5 minutes over medium-low heat, gently flip it, and continue cooking for about 3 more minutes.
With the help of two forks, roughly break the sweet omelette, add a tablespoon of sugar and let it caramelize for a few seconds.
Serve the sweet omelette with a dusting of powdered sugar and some blueberry or red berry/forest fruit jam.
Notes:
The sweet omelette keeps for a few hours at room temperature or in the fridge for one day. Ideally, it should be made and eaten warm. If you don’t like raisins, you can omit them. If you don’t want to use rum, soak the raisins in another liquor of your choice or in cold water.
