Baked fennel and potatoes gratin is a very simple and quick recipe to prepare. I love the combination of fennel and potato, so I decided to use these two vegetables to create an easy and tasty dish, ideal as an appetizer, side dish, or vegetarian main course. Baked fennel and potatoes are ready in 5 minutes, quickly breaded and into the oven, you don’t even need to pre-boil the vegetables, season everything raw, they’re soft inside and crispy outside, super tasty and egg-free, and even the little ones will love them cooked this way!

Ingredients
- 1 cup breadcrumbs
- 2/3 cup parmesan
- 3 potatoes
- 1 fennel
- to taste salt
- to taste black pepper
- to taste spices (as desired)
- to taste extra virgin olive oil
Steps
Baked fennel and potatoes are very simple and super quick to prepare. First, peel the potatoes, clean the fennel, and cut them into slices a little less than half an inch thick.
Put the potatoes and fennel in a bowl and season with salt, black pepper, and extra virgin olive oil. Then add the breadcrumbs, grated parmesan, spices as desired (I used paprika, garlic powder, rosemary, and oregano), and give it a good stir.
Pour some extra virgin olive oil into a baking dish and lay the potatoes and fennel on top, making sure each piece of vegetable is in contact with the base so they cook evenly.
Top the vegetables with the remaining breadcrumbs, add a drizzle of extra virgin olive oil, and bake the fennel and potatoes in a preheated oven at 400°F for 30-35 minutes until they are well browned. Pierce the potatoes with a fork to check for doneness.
Notes:
Baked fennel and potatoes gratin can be kept at room temperature for a few hours or in the fridge for a couple of days. For a tastier version, you can replace some breadcrumbs with cornmeal and/or add some diced pancetta or speck halfway through the cooking.
