The bacon-wrapped chicken thighs with baked potatoes are an easy, quick, and delicious main dish with a side. I had bought some chicken drumsticks and, since I also had some bacon slices to use up, I decided to prepare them like this: I removed the chicken skin, seasoned the thighs, and wrapped them in bacon slices. Spectacular! The bacon-wrapped chicken thighs are ready in 10 minutes and go straight into the oven. They are tender, soft, and juicy inside, and crispy outside. Adding the potatoes makes for a ready-to-go side dish as they cook directly in the oven without needing to be pre-boiled. It’s a perfect meat dish even for holidays, takes little time to prepare, and will please both kids and adults!

- 8.8 oz white wine
- 3.5 oz bacon
- 6 chicken thighs
- 4 potatoes (medium)
- 3 tbsps extra virgin olive oil
- 2 leaves bay leaves
- 1 clove garlic

Steps
Bacon-wrapped chicken thighs with baked potatoes are very easy and quick to prepare. First, remove the skin from the chicken thighs, and cut them with scissors.
Rinse the drumsticks, season them with a pinch of salt (use sparingly as bacon is quite salty) and the spices of your choice (I used smoked paprika, garlic powder, rosemary, black pepper, and thyme) and then wrap each thigh in a slice of bacon.
Place the bacon-wrapped chicken thighs in a baking dish, add the peeled and diced potatoes, the bay leaves, garlic clove, white wine, extra virgin olive oil, a bit of salt only on the potatoes, and bake everything in a preheated oven at 392°F for about 40 minutes.
Notes:
Bacon-wrapped chicken thighs with baked potatoes can be stored in the fridge for a couple of days. If you like, you can also add cherry tomatoes or diced onion. You can also add a bundle of herbs (rosemary, thyme, sage) and add broth or water if you want to create a nice sauce.
