The spiced white chocolate and hazelnut truffles are no-bake treats that are quick and very easy to prepare. I had a package of speculoos cookies, the famous Christmas cookies with a spicy flavor (especially cinnamon), and I wanted to use them to make delicious pralines, sweet balls that are perfect to give as Christmas gifts or to put in the Epiphany stocking. They keep for several days and are super delicious, with the chocolate coating they are really special (and you can also make them alcoholic, obviously not for children :D).

Ingredients
- 7 oz spiced cookies (like speculoos or lotus)
- 3.5 oz white chocolate
- 3.5 tbsp water
- 5.3 oz white chocolate
- 0.88 oz hazelnut crumbs
Steps
The spiced truffles covered in white chocolate and hazelnuts are very simple and quick to prepare. First, finely chop the cookies (use speculoos or Lotus, alternatively, any dry cookies will do).
Add the melted white chocolate (in a bain-marie or microwave), the water, and mix all the ingredients well. You should get a compact and homogeneous mixture.
Take some dough and form balls, slightly smaller than a walnut.
Melt the white chocolate for the coating (again in the microwave or bain-marie), add the chopped hazelnuts, and mix.
Dip the spiced truffles in the white chocolate and hazelnut coating and cover them completely, using two small forks.
Place the spiced truffles on a sheet of parchment paper and let them dry completely before serving or storing.
Advice:
The spiced truffles covered in white chocolate can be stored at room temperature for up to a couple of weeks. For a more particular version (and obviously not suitable for children), you can replace the water with rum or another dry liqueur of your choice.
