The chicken with peas and carrots stew is a quick, tasty, and very easy to prepare meat dish. I had some chicken breast to use up and, having quite a few peas in the freezer, I used them to prepare a flavorful dish that the whole family loved. The chicken with peas is prepared in just a few minutes and is perfect if you don’t know what to make for dinner, the meat bites are very tender and there’s a creamy and delicious sauce, perfect for sopping up with some bread, grab a nice baguette, it can’t be missing to dip into the broth!

Ingredients

  • 1.1 lbs chicken breast
  • 1 cup vegetable broth
  • 1 cup peas
  • 1 onion
  • 1 carrot
  • 1 clove garlic
  • as needed all-purpose flour
  • as needed extra virgin olive oil
  • as needed salt
  • as needed black pepper
  • Half glass white wine

Steps

  • The chicken with peas is very simple and quick to prepare, first cut the chicken breast into small pieces and coat it evenly with flour.

  • Pour a little extra virgin olive oil into the pan and sauté the meat; as soon as it’s golden, salt it and set aside. In the same pan, put the carrots and onions cut into small pieces, the minced garlic, add a little oil and sauté everything.

  • Add the peas (I used frozen ones, but fresh ones are fine too) and let them brown for a few seconds, add the chicken, give it a good stir, and deglaze with the white wine.

  • Pour in the vegetable broth (I used water and my homemade stock cube), cover with a lid, and let the chicken with peas and carrots stew cook for about 20 minutes, checking that it does not dry out too much; if necessary, add a little more broth/water.

  • Once cooking is finished, season the chicken with peas with a bit of black pepper and oregano and serve it.

Notes:

The chicken with peas can be stored in the fridge for a couple of days. If you don’t have vegetable (or meat) broth, salted water is also fine. Instead of white wine, you can also deglaze the meat with beer.
