Ingredients
- 10.5 oz pasta
- 5.3 oz smoked salmon
- 5.3 oz spreadable cheese
- 2 tbsps extra virgin olive oil
- 1 clove garlic
- 1 sprig parsley
- 1 lemon
- to taste salt
- to taste black pepper
Steps
The salmon and lemon pasta is very simple and quick to prepare, first cook the pasta in salted boiling water, for the time indicated on the package.
In a pan, pour the extra virgin olive oil and sauté the garlic clove and parsley stems, add the smoked salmon cut into pieces and let it brown for a minute.
Remove the garlic and parsley stems and add the spreadable cheese, chopped parsley, grated lemon zest, and lemon juice, a bit of pasta cooking water, and mix, you should get a homogeneous cream.
Add the cooked al dente pasta, well drained, a bit of black pepper and mix all the ingredients well.
Plate the creamy salmon and lemon pasta and serve it hot.
Notes:
The creamy salmon and lemon pasta can be stored in the fridge for a couple of days. Reheat it by adding a bit of pasta cooking water directly in the pan and letting it warm up, if you haven’t saved the cooking water, put a bit of water with a pinch of salt. To make it even more flavorful, you can also add some chopped mint at the end of cooking or some toasted almonds.
