The dried fruit tart with raisins and jam is a fragrant and delicious dessert with a soft, crunchy, and tasty filling, made with perfect shortcrust pastry without butter. During the Christmas season, dried fruit is always present on our tables, and I love using it to make many different desserts. This is a real delight, I used almonds, hazelnuts, walnuts, and pistachio, but you can also use peanuts, cashews, or other dried fruits as you like. It is quick to prepare and ideal for breakfast, snack, or as a dessert at the end of a meal, perfect as a New Year’s dessert!

Ingredients
- 2 1/2 cups all-purpose flour
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 2 eggs
- 1 lemon zest
- Half packet baking powder
- 1 pinch salt
- 9 oz mixed dried fruit
- 1/2 cup jam
- 2 oz raisins
Steps
The dried fruit tart with raisins and jam is very simple and quick to prepare, first make the shortcrust pastry without butter.
In a bowl, put the flour, sugar, baking powder, a pinch of salt, vegetable oil, and grated lemon zest, and quickly mix with a fork, you will get a crumbly mixture.
Add the eggs and form a soft and compact dough, roll out the pastry inside a pan lined with parchment paper, covering the base and edge.
In a bowl, put the dried fruit of your choice (I used blanched and unblanched almonds, walnuts, hazelnuts, and pistachios), the raisins soaked in cold water and well-drained, the jam of your choice (I used peach jam), and mix everything together.
Spread, if you like, a couple of tablespoons of jam on the base of the pastry, add the dried fruit, raisin, and jam filling, level it well, and bake the dried fruit tart in a preheated oven at 350°F for about 40 minutes, the pastry should be golden.
Notes:
The dried fruit tart with raisins and jam can be stored at room temperature for up to a week. For the filling, you can use any dried fruit you prefer, even just one type. If you don’t like raisins, you can omit them. Feel free to choose any jam/preserve flavor you prefer.
