Salmon in carrozza is a simple and delicious fish variant of the classic mozzarella in carrozza. Being in the midst of the Christmas period, I wanted to use smoked salmon to prepare a tasty appetizer that is perfect even for Christmas or New Year’s Eve parties. Salmon in carrozza is prepared in a few minutes, and you can also make it in advance. I baked it in the oven, but you can also fry it for an even tastier version, it’s super crispy on the outside and soft and melty on the inside, easy and tasty!

Ingredients
- 4.2 oz smoked salmon
- 4.2 oz scamorza cheese
- 2/3 cup breadcrumbs
- 3/4 oz corn flakes
- 8 slices sandwich bread
- 2 eggs (large, or 3 small)
- as needed flour
- as needed salt
Steps
Salmon in carrozza is very simple and quick to prepare, first take a slice of sandwich bread and cut it in half.
Fill half a slice of bread with a piece of scamorza (or mozzarella) and a piece of smoked salmon, close with the other half, pressing well.
Proceed in this way to make all the other sandwiches and pass them first in the flour, then in the beaten eggs with a pinch of salt, and finally, in the breadcrumbs mixed with the crushed corn flakes.
Place the salmon in carrozza on a baking sheet, drizzle with extra virgin olive oil and bake it in a preheated oven at 350°F for about 20 minutes.
Notes:
Salmon in carrozza can be kept at room temperature for a few hours or in the fridge for a couple of days. You can also prepare it the day before and keep it in the fridge, then cook it shortly before serving. For an even more delightful version, you can make smaller sandwiches by cutting each in half before breading, thus obtaining double the pieces (16) with the same ingredients. Of course, you can also fry them in hot seed oil or cook them in an air fryer.
