The baked sweet omelette is an easy, quick, and truly delicious recipe. Many of you will surely know the emperor’s sweet omelette, typical of South Tyrol, I love it and often prepare it for breakfast, especially on Sundays. This time, I wanted to try a similar preparation in the oven, not in a pan, simple, without raisins, apples, or anything else, so I don’t even have to flip it and I must say it turned out wonderfully! The baked sweet omelette is soft, fragrant, and delicious, somewhere between a pancake and a sponge cake, perfect on its own, ideal to accompany with jams of your choice, Nutella, honey, maple syrup, or other spreadable creams you like, then cut it into very soft pillows that melt in your mouth!

Ingredients
- 3.5 oz milk
- 1/2 cup all-purpose flour
- 2 tbsps sugar
- 2 eggs
- 1 tsp baking powder
- 1 lemon zest
- 1 pinch salt
- 1 pat butter (optional)
Steps
The baked sweet omelette is very simple and quick to prepare, first separate the yolks from the whites and beat the whites until stiff peaks form, using an electric mixer.
In a bowl, place the yolks, sugar and continue working with the electric mixer for a few seconds, add the flour, baking powder, milk, grated lemon zest and mix everything together, then gradually fold in the beaten egg whites.
Transfer the batter to a cake tin lined with parchment paper (mine was 8 inches in diameter, if you like, first place a few small pieces of butter on the parchment paper) and bake the baked sweet omelette in a preheated oven at 350°F for 25 minutes, until golden brown.
Cut the baked sweet omelette into squares and garnish them with a sprinkle of powdered sugar.
Notes:
The baked sweet omelette can be kept at room temperature for one day or in the fridge for 2-3 days. You can enjoy it plain or accompany it, like the classic pan sweet omelette recipe, with blueberry or wild berry jam, Nutella, honey, maple syrup or other spreadable creams as you like.
