The banana and coconut cookies are soft, fragrant, light, and delicious pastries that you can prepare in 5 minutes with only 3 ingredients (2 if you don’t want to add chocolate). I had quite a few bananas to use up, I love the combination of coconut and banana, so I decided to make these treats that were a hit. Without flour, yeast, sugar, butter, oil, eggs, or milk, the banana and coconut cookies melt in your mouth, ideal for breakfast, a snack, or as a treat, perfect for those with intolerances to gluten, lactose, eggs, or yeast, ideal for those following a controlled/fit diet, they are protein-rich, vegan, and absolutely delicious, the dark chocolate on top makes them truly indulgent!

Ingredients
- 4.4 oz desiccated coconut
- 0.9 oz dark chocolate (optional, for decoration)
- 2 bananas (ripe)
Steps
The banana and coconut cookies are very simple and quick to prepare (for this recipe, you should use ripe bananas, it’s specifically designed to use them up as the unripe ones are less soft and flavorful). First, peel the bananas and mash them with a fork until they become a puree.
Combine the desiccated coconut to form a soft and homogeneous mixture. Take a walnut-sized piece of dough, form it into a ball, and flatten it to about an inch thick.
Place the banana and coconut cookies on a baking tray and bake them in a preheated oven at 356 degrees Fahrenheit for 15-20 minutes, until lightly golden. Do not overbake them, or they will dry out.
Remove the banana and coconut cookies from the oven and decorate them, if you like, with melted dark chocolate (using a bain-marie or microwave). I used a pastry bag with a very small round nozzle, but you can also use a teaspoon or a small fork.
Notes:
The banana and coconut cookies keep at room temperature for 3-4 days. If you don’t want to use dark chocolate, you can simply omit it. To make them richer, you can add some chopped nuts (hazelnuts, almonds, walnuts, or pistachios) on top of the warm chocolate.
