The ricotta and orange zeppole are fried sweets without leavening, fragrant, and very soft. I wanted to make some sweet fritters, I had some fresh ricotta to use up, and I used it to make these incredibly soft zeppole. Fantastic! Ricotta and orange zeppole are prepared in a few minutes, and you make the dough with a fork, without butter and without oil! Ricotta and orange zeppole are perfect for any occasion, at the end of a meal or as a snack, also perfect for the Christmas holidays or Christmas day, you make them and cook them right away, and they remain soft even the next day 😀

Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup ricotta
- 1/2 cup sugar
- 3 1/2 tbsp orange juice
- 1 egg
- 1 orange zest
- 1 pinch salt
- Half packet baking powder
- to taste sugar and cinnamon for coating
Steps
Ricotta and orange zeppole are very simple and quick to prepare. First, put the ricotta (which must be very dry; if you buy it fresh, let it drain before using it, ideally the night before), sugar, egg, grated zest, and orange juice in a bowl and mix with a fork.
Add the flour, baking powder, a pinch of salt, and mix all the ingredients together, always using the fork, the dough will be quite soft.
Transfer the mixture to a floured work surface and work it quickly, then detach small pieces, form strips about 1/2 inch thick, and cross the ends to obtain a zeppola.
Make all the ricotta and orange zeppole like this and fry them in hot seed oil until golden, it will take about 3-4 minutes per side. Keep the flame medium-low to prevent the sweets from darkening too much on the outside while remaining raw inside.
After cooking, pass the ricotta and orange zeppole, still warm, in sugar and cinnamon.
Notes:
Ricotta and orange zeppole can be stored at room temperature for 3 days. You can use either cow’s milk or sheep’s milk ricotta for this recipe; I used the former. The important thing is that it is very dry. If you want to make them simple, without the orange juice, replace it with milk. If you want to cook them in an air fryer, you can, but, in this case, you will get soft cookies, not soft fritters. If you don’t like cinnamon, you can simply omit it. Conversely, if you like it, you can also add a teaspoon to the dough.
