Baked Chicken Tray with Potatoes, Sweet Potato, and Onions

There are evenings when I don’t feel like messing with a thousand pots, but I still want to serve a warm, complete, and tasty dinner. That’s why I love recipes I call “tray dinners”: you prepare everything in a few minutes, put it in the oven… and it does the rest.
This tray of baked chicken with potatoes, sweet potato, and onions is perfect while I’m working at the PC on the blog, between something to write, a recipe to check, and a thousand pages to organize.

On these super hectic days with many problems, I need smart dinners: quick to prepare, without having to stir and check every two minutes. And this recipe is super convenient because it’s all done in one tray: a complete dish, no fuss, and at the end, there’s only one thing to wash! And it’s perfect for that, right?
I throw everything in, season it in two seconds, bake it… and in the meantime, I go back to my work. After about forty minutes, I take a look and find a complete dinner already ready: beautifully golden chicken, soft and flavorful potatoes and onions, and even sweet potato that fits perfectly in winter. Zero stress, zero pots, and I save the evening.

Variations I recommend!
Add thyme for a more Mediterranean taste.
Add carrots or pumpkin cubes along with the potatoes.
Serve with BBQ sauce on the side in a small bowl (perfect for dipping).
If you want it spicy: add chili pepper.

Storage
It can be stored in the fridge for 2 days in a closed container.
To reheat: oven at 350°F for 10-12 minutes or in a covered skillet.

CHICKEN COOKING TIPS
Should chicken be washed?
No. Chicken should never be washed under water because washing does not eliminate bacteria and can actually spread them on kitchen surfaces. It is sufficient to pat it dry with paper towels before cooking.

How should chicken be once cooked?
The chicken should be always well-cooked and never pink or bloody. The meat should be completely white inside to be safe to eat.

What to do to avoid contamination?
After touching raw chicken, it is important to wash hands, utensils, and surfaces well to avoid cross-contamination with other foods.

Ingredients

  • 12 chicken drumsticks
  • 1 sweet potato (or yam)
  • 14 oz small potatoes (small or regular cut into pieces)
  • 1 onion (I now have red ones in the kitchen)
  • 2 cloves garlic
  • to taste rosemary
  • to taste sweet paprika
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Preheat the oven to 400°F static.
    Put parchment paper on the baking tray.
    Cut the peeled sweet potato into cubes.
    Halve the small potatoes and cut the peeled red onion into wedges.
    Put everything in a bowl and season with extra virgin olive oil, rosemary, sweet or spicy paprika as desired, salt, and pepper.
    Mix well.

  • Arrange this mix of vegetables in the tray and then add the chicken drumsticks.

    Add a little more Evo oil and cook in the oven for about 40-45 minutes until fully cooked, taking care to add a little water if the preparation becomes too dry.

    A complete dish that’s tasty and full of flavor!
