The vastasa salad is a traditional Sicilian recipe, particularly from Palermo. The term vastasa in Sicilian dialect means rough or coarse, and it refers to the rustic and flavorful character of this salad. It is a simple but tasty dish, perfect for summer, that can be considered a hearty appetizer or a standalone vegetarian dish.

Ingredients
- 21 oz potatoes
- 10.5 oz green beans
- 7 oz cherry tomatoes
- 3.5 oz olives
- 1 red onion
- to taste oregano
- 2 tbsp white wine vinegar
- to taste salt
- 5.5 tbsp extra virgin olive oil
Steps
Wash the potatoes, place them in a pot full of cold water, and set them on the stove, allowing them to cook for 20-25 minutes. Once cooked, drain them and let them cool. The cooking time may vary depending on the size of the potatoes; they are done when you can easily pierce them with the prongs of a fork.
Meanwhile, trim the green beans by cutting off the ends, cut them in half, and wash them thoroughly under running water. Cook them in plenty of salted water for about ten minutes, drain them, and place them in a bowl to cool.
Peel the onion, cut it into rings and let it macerate for about ten minutes, first in a tablespoon of vinegar and then in cold water for at least half an hour. Drain and squeeze it well when it’s time to combine it with the other ingredients.
Wash the cherry tomatoes well. I used a mix of yellow, green, and red cherry tomatoes, cut them in half, and place them in a large bowl.
Peel the potatoes, cut them into cubes, and add them to the cherry tomatoes, along with the green beans, olives, and well-squeezed onion.
Season with oil, salt, oregano, and vinegar. Mix well and serve your vastasa salad well chilled!
