Ingredients

  • 2.2 lbs potatoes
  • 1 clove garlic (optional)
  • 5.3 oz caciocavallo cheese (grated)
  • 3 eggs
  • 1 bunch parsley
  • 2/3 cup breadcrumbs
  • salt
  • extra virgin olive oil (for frying)

Steps

Boil the potatoes with their skin in a large pot of water for about 40 minutes (to check if they are cooked, insert a toothpick; if it penetrates the potato without resistance, they are done).
Once the potatoes are cooked, mash them with a potato masher and place the purée in a bowl to cool slightly.

  • Add the eggs, grated caciocavallo cheese, finely chopped garlic clove, breadcrumbs, salt, and chopped parsley, and mix everything well until you get a nice firm dough.
    With dampened hands, form patties and flatten them slightly; continue until you have used all the dough, and as you form the patties, place them on a tray without overlapping.

  • Heat a frying pan with oil and, once hot, fry the potato patties a few at a time, turning them on all sides until golden.
    As you fry them, place them on a sheet of butcher or kitchen paper to absorb excess oil.
    Serve immediately and enjoy!

Notes

Sicilian potato patties can also be baked for a lighter and healthier dish. Simply place them on a baking sheet lined with parchment paper, drizzle with a little extra virgin olive oil, and bake in a preheated static oven at 350°F for 20-25 minutes.
