Ingredients
- 2.2 lbs zucchini
- flour
- seed oil (for frying)
- fine salt
Steps
To prepare Roman style fried zucchini, start with the zucchini: wash them, dry them, trim them, and cut into thin slices, then slice each piece into strips a few millimeters wide. You can also use a mandolin to speed up this process.
Place the sliced zucchini in a colander, season lightly with salt, and let them sit for 15-20 minutes to release their water.
After the time has passed, gently squeeze the zucchini and pat them dry with a clean cloth.
Pass the zucchini through the flour, remove excess flour, and fry them in batches in hot oil until they are golden brown.
With a slotted spoon, remove the zucchini from the oil and place them on a plate lined with paper towels to remove excess oil.
Adjust salt to taste and serve your Roman style fried zucchini hot.
