Ingredients

  • 1/2 cup chickpea flour
  • 3/4 cup hazelnuts (finely chopped)
  • 1/4 cup sugar (if you prefer more sweetness, you can go up to 1/3 cup)
  • 1 1/4 cups Type 2 flour
  • 2 1/2 tbsps cornstarch
  • 2 eggs
  • 1/4 cup extra virgin olive oil
  • 2 tsps baking powder
  • 1 pinch salt
  • A few drops vanilla essence
  • to taste powdered sugar (optional, as preferred)

Steps

  • In the food processor bowl, place the hazelnuts and chop until you obtain a fairly fine granule.

    Break the eggs into a bowl, add the sugar, vanilla, and EVO oil.

    Mix with a fork and blend the ingredients together.

    Add a pinch of salt and gradually start sifting the flours and baking powder.

    Also incorporate the hazelnut granule and mix again with the fork.

    When the dough starts to become firmer, knead with your hands to form a smooth and soft dough ball.

    This dough ball will have a fabulous consistency, soft and easy to work with.

  • It will be simple to prepare the cookies either by hand, forming balls of 25 grams each, which I then flattened on the tray and decorated with a heart or flower stamp, or by rolling out the dough on the work surface and using whichever cutters you like best.

    Place the cookies on a tray/baking sheet covered with parchment paper or a silicone mat.

    With these quantities, you will get 20 cookies.
