Delicious Romantic Chocolate Coffee Cake for a special celebration, a super delicious and vegan cake.

Whether it’s Valentine’s Day, Mother’s Day, or Father’s Day, this simple chocolate coffee and strawberry cake will not disappoint. I tried the batter with soft muffins with yogurt and muesli, and they were so appreciated that I wanted to replicate it with this cake. It contains no eggs or butter, is light, filled with strawberry jam, and glazed with dairy-free hazelnut cream and freeze-dried strawberries.

Delicious Chocolate Coffee Cake

Ingredients

  • 1 1/4 cups type 2 flour
  • 1/2 cup cornstarch
  • 1/3 cup muscovado sugar
  • 1 packet baking powder (vegan)
  • 1 pinch sea salt
  • 2 teaspoons coffee powder
  • 3.4 oz almond milk
  • 3.4 oz coffee (unsweetened)
  • 3.4 oz sunflower oil (high oleic or rice)
  • 3 tablespoons hazelnut cream (organic)
  • 3 tablespoons strawberry jam (organic)
  • 3 tablespoons 70% dark chocolate (dairy-free chocolate curls)
  • 1 tablespoon strawberries (freeze-dried)

Preparation

  • Preheat the oven to 355°F. Prepare the unsweetened coffee and let it cool for a few minutes; otherwise, it will stop the rising process when in contact with the baking powder.
    In a bowl, sift together the type 2 flour with the cornstarch, add the muscovado sugar, baking powder, the pinch of salt, and the coffee powder.

    Mix together almond milk, coffee, and oil, and pour while mixing well until you have a soft batter. Pour into an oiled and floured 8-inch heart-shaped mold.

    Bake for 40 minutes at 355°F with a toothpick test that must come out dry, so you know for sure the cake is baked.

    Let the cake cool and gently cut it in two with a sharp knife, brush with some spoonfuls of almond milk, mix well, and spread the strawberry jam, close the cake, pressing a little.

    Melt in a small bowl the dairy-free hazelnut spread with a dash of hot plant-based milk, mix until forming a smooth cream to spread on the cake leveling it.

    Decorate with dark chocolate curls and freeze-dried strawberries. Happy celebration with love.
