A very tasty first course and flavorful, the quick pasta with sausage pesto is also beautifully colorful and …worth making again!

The raw pesto is a quick and delicious way to season pasta, and now that summer is approaching, it is definitely much appreciated because the heat is coming, and there won’t be much desire to spend time cooking!

I used a lot of basil, cherry tomatoes, and some spicy sausage that I cooked for 2 minutes in a pan so it releases more of its aromas!

Alternatively, if you like, you can also use garlic sausage and another type of tomatoes, like cherry tomatoes…

In conclusion, you can make this sausage pesto in abundance and after putting it in a jar, cover it with oil and store it in the refrigerator for 3/4 days…

Quick Pasta with Sausage Pesto

Ingredients

  • 11 oz rigatoni
  • 10.5 oz cherry tomatoes
  • 1.75 oz pine nuts
  • 5 slices spicy salami (with chili)
  • 1.4 oz Parmesan cheese
  • to taste basil (abundant)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Preparation

  • • Wash the cherry tomatoes, put them with the pine nuts, 1 tablespoon of extra virgin olive oil, and plenty of fresh basil in the mixer.

    Pulse the blades intermittently, leaving the pesto coarse, not too fine.

    Adjust with salt and pepper.

  • • Pour the mixture into a pan and add the Parmesan, leaving it on the heat for a couple of minutes.

    • In another small pan, quickly brown the slices of sausage for a few minutes and then quickly blend them in the mixer.

  • • Now put the sausage pesto in the pan with the mixed seasoning and start cooking the pasta.

  • • Cook the pasta, for me, La Molisana rigatoni, in boiling salted water.

    Drain the pasta, saving a ladle of cooking water, and then pour it into the pan with the mix of basil, tomatoes, sausage, and pine nuts.

  • At this point, there is nothing left but to sauté the pasta with the sausage pesto, adding a little water if needed, then we plate our guests’ dishes.
