  • 2.2 lbs mixed ground meat
  • 14 oz spinach
  • 14 oz smoked scamorza cheese
  • 1.75 oz grated Parmesan cheese
  • 2.8 oz breadcrumbs
  • 2 eggs

How to Prepare Meat Sandwiches with Scamorza and Spinach

  • Carefully wash the spinach and clean them by removing the damaged leaves and thicker stems.

    Gather the spinach in a pot that can contain them all, pour three fingers of water, add a tablespoon of coarse salt, and cook the spinach, with the lid, for 10 minutes from the boiling point.

  • Drain the spinach and let them drain well and, when they have cooled down, squeeze them well to remove all excess water.

  • In a bowl, place the ground meat, eggs, Parmesan cheese, breadcrumbs, aromatic herbs, salt, and a pinch of pepper and mix well.

  • Then divide the mixture into two parts.

    On two sheets of baking paper (photo 1-2), roll out one part of the ground meat using the rolling pin, forming a rectangular sheet about 0.2 inches thick (photo 3).

    Do the same with the other part of the ground meat (photo 4), trying to obtain a sheet of the same size as the previous one.

  • Cut the scamorza cheese into thin slices and place them on one sheet of meat (photo 5), then cover with the cooked spinach (photo 6). Lift the other sheet of meat with the baking paper and position it over the spinach (photo 7), and press well with the rolling pin.

  • Place the filled sheet in the refrigerator for at least 30 minutes then cut it into triangles (photo 8) and cook the ‘sandwiches’ obtained in a very hot pan with a drizzle of oil, 3-5 minutes per side.

  • For cooking the meat sandwiches in an air fryer, cook them at 400°F for 6-7 minutes.

    For traditional oven cooking, in a ventilated mode at 350°F for about 10-15 minutes.
