How to Make Yogurt and Fresh Blueberry Pound Cake
First, prepare the pan: grease a loaf pan with vegetable oil and line it with two strips of parchment paper, arranged in a cross: one strip to cover the length and short sides of the pan, and the other to cover the width and long sides, leaving paper edges to easily lift and remove the cake from the pan.
Preheat the oven to 350°F, static mode.
In a bowl, combine the flour, a pinch of salt, and sifted baking powder.
In another bowl, mix the sugar, yogurt, eggs, grated lemon zest, and vanilla extract with a hand or electric whisk until well combined.
Gradually add the dry ingredients in three batches, mixing the batter after each addition to ensure the ingredients are well incorporated.
Add the oil and mix. Finally, fold in the washed and dried fresh blueberries.
Pour the batter into the pan and bake the pound cake in the preheated oven at 350°F for about an hour, but always do the toothpick test: inserted in the center of the cake, it should come out dry.
Once baked, remove the pound cake from the oven and let it cool slightly, then lift it out of the pan using the parchment paper edges, and let it cool completely on a wire rack.
