Ingredients
- 1 3/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 packet baking powder
- 1 pinch salt
- 3/4 cup brown sugar
- 1 cup water (warm)
- 3 tbsps vegetable oil
- as needed powdered sugar (for dusting)
Tools
- 1 Muffin Tray
- 1 Whisk
- 12 Cupcake Liners
- 1 Bowl
- 1 Oven
Preparation of Super Soft Cocoa Muffins
First, preheat the oven to 356°F, in static mode.
In a bowl gather the sifted flour along with the baking powder, pinch of salt, and cocoa.Add the brown sugar and mix to combine the ingredients.
Gradually add the warm water, continuing to stir with a whisk, and lastly add the oil and mix until you get a smooth and homogeneous mixture.
Line a 12-muffin tray with paper liners.Pour the obtained mixture into the liners reaching about half an inch from the rim.
Bake the cocoa muffins in the preheated oven for about 20-25 minutes but, since ovens are not all the same, perform the toothpick test: insert it into the center of the muffin, and it should come out dry.
Remove the muffins from the oven and let them cool completely, then dust with powdered sugar and serve.
NOTE: For those following the Weight Watchers plan, one of these muffins has about 4.2 propoints.
