There are days when it takes very little to make breakfast better. A few apples in the fruit basket, a bowl on the table, and the desire to prepare something tasty but not too messy for the family.

This cake is just like that, no stress, no scale, and only with ingredients we have at home.
It’s soft and moist just right, and it perfumes the kitchen as it bakes, giving it a unique atmosphere. I often prepare it for breakfast and snack time because everyone loves it and it stays soft even the next day, actually, it’s even better.

It’s a pantry cake, to be cut into slices even during the day, maybe when you’re still in pajamas.
Simple, reassuring, and perfect to make again when you have apples at home and need a bit of sweetness.

Ingredients

For this Apple Cake, you don’t need special ingredients or complicated measurements. I used the classic yogurt jar as a measuring cup, so you don’t even need a scale. All simple ingredients, the ones we always have at home, available when we want to make a dessert for the family.

  • 3 eggs
  • 1 cup granulated sugar
  • 1 jar plain yogurt (neutral)
  • 1 jar sunflower seed oil
  • 3 cups all-purpose flour
  • 1 packet baking powder (for sweets)
  • 1 lemon peel (grated or orange)
  • 4 apples (depending on size)
  • to taste powdered sugar
  • ground cinnamon (optional)

Steps

The procedure is simple and within everyone’s reach. No particular kitchen robots are needed nor complicated steps: just a bowl, a whisk, and some calm. It’s one of those recipes that you can prepare even with children around, without stress.

  • 1. In a large bowl, break the eggs, add the sugar, a pinch of salt, and the grated peel of a lemon or an orange. Mix until you get a light and uniform mixture, not too whipped.

    2. Pour 1 jar of seed oil (100ml) in a stream and then 1 jar of neutral yogurt (125 ml), continuing to mix calmly. This is a cake that should relax and is best done without haste.
    3. Add 3 jars of all-purpose flour (300 g) and 1 packet of baking powder (16 g).

  • 4. Peel 4-5 apples, it depends a lot on their size, and cut them into pieces or as I did into rather thin slices with a well-sharpened knife (but you can also use a mandoline). If there are children or good helpers, this is the right time to get help.
    5. Line the 9-inch pan with baking paper, or grease and flour it. I usually put parchment paper on the bottom, greasing the sides. Pour the mixture and level gently. If you like, put some apple slices on the surface as decoration.

  • 6. Bake in a preheated static oven at 350°F for 50-60 minutes. Always do the toothpick test before removing from the oven. If it comes out dry, our Creamy Apple Cake for Breakfast is ready.
    7. Once cooked, let it cool completely, but just out of the oven, it is a bomb. Sprinkle generously with powdered sugar, and if you like, add a teaspoon of ground cinnamon and sprinkle our cake with this mix.

You can add 1 tablespoon of jam or a teaspoon of cinnamon even to the batter for a more indulgent version.
If you prefer, you can use half whole wheat flour and half all-purpose flour.
The cake stays soft for 3-4 days at room temperature, covered with a dome or airtight container.
It’s also great the next day, even slightly warmed.
