Baked Cookies and Fruit Dessert

This cake starts with a simple and clever base: whole cookies on the bottom, fresh berries, and a soft batter without butter that envelops everything during baking. The result is a genuine, fragrant, and light dessert, where the contrast between the softness of the batter and the tartness of raspberries and blueberries makes every slice very tempting.

At home, both my son and I have a real passion for berries, and if you like, you can enrich the cake by adding blackberries or currants, choosing what you have available or what you prefer.
This dessert is very easy, homemade, very quick to prepare, and butter-free, perfect for breakfast, a snack, or when you crave a simple but well-made cake.

Served as is, it’s perfect, but if you want, you can accompany it with a dollop of whipped cream or some custard: a little extra indulgence that turns it into a truly special treat!

Ingredients

  • 1.5 cups all-purpose flour
  • 1/2 cup milk
  • 4 eggs
  • 1/3 cup sugar
  • 1/3 cup vegetable oil
  • 2 tsp baking powder
  • 8 Digestive biscuits
  • 1 lemon (organic and only zest)
  • as needed berries (I went random without weighing them and using raspberries and blueberries)
  • as needed powdered sugar
  • as needed sliced almonds

Steps

  • Line the pan and arrange the chosen cookies covering most of the space.

  • Add the washed and patted raspberries

  • and also the blueberries always prepared the same way.

  • Beat the eggs with the sugar, then add the grated lemon zest, milk, vegetable oil, sifted flour with baking powder, and mix well to obtain a fluid and homogeneous batter

  • which should then be poured over the fruit and leveled well.

  • Sprinkle the baked cookies and berries dessert with the almonds and then bake at 350°F for 35/40 minutes or until fully cooked.

    Sprinkle with powdered sugar and …enjoy your meal!
