Mexican Buñuelos

Mexican Buñuelos, sweet Carnival fritters, extremely tasty, of Mexican origin, very easy to make. They closely resemble our classic fairground fritters, but they are even better. Always fried because, at least during Carnival, you must fry. They are not too sweet because the only sugar they contain is the cinnamon-flavored one on the surface. Plus, they don’t require lengthy rising times, as classic baking powder is used. Once the dough is formed with the classic ingredients of flour, water, a little butter, and eggs, I shaped balls which I then rolled out with a rolling pin. Make sure to get thin circles because they are fried in hot oil and rise during cooking, forming bubbles on the surface. Remember to flavor the sugar with cinnamon in advance so the fritters can be tossed right after frying. In this way, the surface can sugar without problems. As a final result, you will get a delicious and fragrant sweet, crunchy on the outside and slightly soft inside. I’m sure it will win you over too. Ingredients

  • 2 3/4 cups all-purpose flour
  • 2 eggs
  • 1/2 cup water (lukewarm)
  • 1 tbsp butter (melted)
  • 2 tsp baking powder
  • 1 packet vanillin

Steps

  • First, melt the butter in the microwave and let it cool. Then put the flour with the baking powder in a bowl and also add the eggs and the cooled melted butter. Start mixing with a spoon and then also add the lukewarm water. Continue kneading with your hands until you obtain a smooth and homogeneous dough. Cover it with plastic wrap and let it rest for 10 minutes at room temperature.

    Then, take the dough and divide it into 12 balls. Flour the work surface and roll out each ball until you obtain thin circles. Heat the oil in a pan and, once hot, dip the fritters one at a time, cooking them a couple of minutes on each side.

    Drain them on absorbent paper and pass them in the sugar previously flavored with cinnamon, ensuring it adheres well on both sides.
