Rice Sheets with Apples and Chocolate
Let me reveal my new obsession: rice papers. Yes, the ones we usually use for spring rolls! This time we turn them into a gluten-free dessert, crispy on the outside with a soft and delicious heart of diced apples and dark chocolate. A smart recipe, light and very quick to prepare, perfect when you crave something sweet but don’t want to turn on the oven.
In the air fryer, the rice sheets become golden and super crispy in a few minutes, with very few ingredients and zero complicated doughs. It’s a light dessert but satisfying, ideal also as a different snack or last-minute sweet treat.
You can easily customize them: diced apples can be used raw for a fresher and lighter result, or sautéed in a pan for a few minutes to make them softer and slightly caramelized. If you love spicy aromas, add a pinch of cinnamon or ginger for an even more enveloping touch.
A simple, gluten-free recipe, ready in about 15 minutes and perfect for surprising with something original and irresistibly crunchy.

Ingredients
- 4 rice paper (sheets)
- 1 apple
- 1 egg
- 1/3 cup milk
- to taste dark chocolate chips

Steps
In a bowl, beat the egg with the milk until you get a homogeneous mixture.
Take a rice paper sheet and quickly dip it in the egg and milk mixture, just enough to soften it (not too much, it should separate but not fall apart).
Place it on a plate or work surface.
In the center of the sheet, place a tablespoon of diced apples and the chocolate chips.Fold the sides of the rice paper like a package, sealing the filling well inside, and
place all the packages in the basket of the air fryer (lined with parchment paper).
Cook at 356°F (180°C) for 12–15 minutes, turning halfway through, until they are golden and crispy.

Storage and Tips…
Store the rice sheets with apples and chocolate in the refrigerator, in an airtight container, for 1 day.
To regain crispiness, heat them in the air fryer at 338°F (170°C) for 3–4 minutes before serving.
Freezing is not recommended as the rice paper tends to become gummy.
