Ingredients for Savory Puff Pastries with Potatoes, Ham, and Provolone
- 1 roll puff pastry
- 2 potatoes, with skin, cooked, boiled
- 3.5 oz cooked ham
- 4 slices provolone cheese
- 2 tsp nutmeg
- 4 pinches salt
- 1.5 tbsp butter
- 1 egg
- 1 egg yolk
Preparation of Savory Puff Pastries with Potatoes, Ham, and Provolone
Roll out the puff pastry rectangle and, with a sharp knife, divide it into three equal parts.
Brush the three strips obtained with 2 teaspoons of melted lukewarm butter.
Then, overlap the strips and roll them up to form a cylinder. Wrap it tightly in parchment paper and let it rest in the freezer for 25 minutes.
Pass the two boiled potatoes through a sieve and add salt and nutmeg. Gently mix with a fork.
Now, add the remaining 2 teaspoons of melted butter and the sweet provolone (or scamorza) cut into pieces. Then, the cooked ham, also cut into pieces.
Finally, add the egg and mix everything together.
Take the puff pastry cylinder from the fridge and cut 7 slices, 0.4 inches thick.
Take each puff pastry slice and gently press it with your hands, pressing from the center outward to create a hollow.
Fill the pastries with the potatoes, ham, and provolone mixture. Then, close them by pinching the edges with your fingers.
Place the pastries on a baking tray lined with parchment paper, well-distanced from each other.
Brush the pastries with the beaten egg yolk.Bake in a preheated oven at 392°F for about 25 minutes, until the puff pastry is cooked and golden.
Tips for pastries with potatoes and ham
You can replace the cooked ham with speck or salami.
You can decorate the surface of the pastries with potatoes, ham, and provolone with sesame seeds.
Storage
The savory puff pastries with potatoes, cooked ham, and provolone can be stored in the fridge for 2 days, in an airtight container or well-covered with food wrap.
To make them crispy again, I recommend reheating them in a static oven at 338°F for about 8-10 minutes. Avoid the microwave: it tends to make them too soft, losing the crispiness of the puff pastry.
You can also freeze them already cooked: let them cool completely, then place them in a food bag. They keep for up to 1 month. For the best taste, thaw them in the fridge and heat them for a few minutes in a hot oven.

FAQ
Can I prepare the savory puff pastries with potatoes, cooked ham, and provolone in advance?
Yes, you can assemble them a few hours in advance and store them in the refrigerator raw, well covered. Bake just before serving for perfectly crispy puff pastry.
Can I use another cheese instead of provolone?
Sure. You can replace the sweet provolone with scamorza, well-drained mozzarella, or even fontina. The important thing is to choose a cheese that melts well but does not release too much water.
Do the potatoes need to be completely cold?
Yes, it’s better to use cold or lukewarm boiled potatoes. If too hot, they could excessively soften the puff pastry.
Can I make them in an air fryer?
Yes, you can cook the savory puff pastries with potatoes, cooked ham, and provolone in an air fryer at 356°F for about 12-15 minutes, checking the browning in the last minutes.
