Ingredients

  • 1 orange (untreated)
  • 3.5 oz chocolate chips
  • 1 3/4 cups all-purpose flour
  • 1/3 cup cornstarch (cornflour)
  • 2 eggs
  • 1/2 cup sugar
  • 1/3 cup butter (or sunflower oil)
  • 1 packet baking powder
  • 1/2 cup milk
  • 1/2 cup orange juice

How to make orange and chocolate muffins

  • Let’s start preparing the orange and chocolate muffins. Cut the butter into pieces and melt it. You can melt it in a double boiler, in the microwave, or in a saucepan over low heat to avoid browning it.

  • Pour the eggs into a bowl, add the sugar, and beat with an electric whisk until light, frothy, and fluffy.

  • While whisking, slowly add the melted butter until incorporated into the eggs. Wash the orange well and grate the zest into the mixture. Now squeeze the orange juice and set aside 100 ml, which we will use later.

  • Add the sifted flour and baking powder, incorporating well with the electric whisk to avoid lumps. Add the milk and 100 ml of orange juice and continue to whisk to achieve a creamy, lump-free mixture.

  • Add the chocolate chips and fold them in with a fork or spatula. Then transfer the mixture into the 6 large cases or the 12 smaller ones.

  • Place the cases on a baking tray and bake in a preheated static oven at 350°F (180°C) for 20/25 minutes. The baking time might vary depending on the oven type. Before removing them, do the toothpick test; if it comes out moist, continue baking.

  • Place the cases in the air fryer basket. Cook for 15 minutes at 350°F (180°C), then open the basket and check the cooking with a toothpick. Cooking time might vary depending on the air fryer type.

  • Once the muffins are cooked, remove them from the oven and let them cool. If you like, you can dust them with powdered sugar.

How to store orange and chocolate muffins

Store them at room temperature for 2/3 days in an airtight cake container or a well-sealed bag.
