Fragrant and very delicious, pumpkin and cinnamon muffins are perfect for breakfast, a snack, or to accompany a cup of tea on cooler days. With a vibrant color and delicate taste, the cinnamon gives them that extra touch that makes them special.
An easy recipe to prepare, genuine and fragrant, capable of transforming a few ingredients into a small comfort food. I didn’t overdo it with the cinnamon, I used half a teaspoon, but if you want, you can use a whole one.

Ingredients
- 7 oz pumpkin (already cleaned)
- 1 2/3 cups all-purpose flour
- 1/2 cup sugar
- 2 eggs
- 3 1/2 tbsp butter (soft)
- 1 tbsp baking powder
- Half teaspoon ground cinnamon
- 1 pinch salt

Steps: Pumpkin and Cinnamon Muffins
Finely blend the pumpkin and place it in a bowl. Add the eggs, sugar, and butter, and beat the mixture with a hand mixer.
At this point, add the flour, cinnamon, salt, and baking powder and mix well until you get a smooth and lump-free mixture.
Now line the muffin pan with paper liners and fill them three-quarters full with the mixture.
Bake in a preheated oven at 356°F for about 20 minutes, or in an air fryer for 11 minutes at 320°F, then lower the temperature to 302°F and continue cooking for another 4 minutes.
Put the pumpkin in the mixing bowl and chop it for 10 seconds at speed 5, then bring it to the bottom with the spatula.
Add the eggs, sugar, and butter and blend for 5 seconds at speed 7.
At this point, add the flour, salt, cinnamon, and baking powder and mix for 20 seconds at speed 5.
Line the muffin pan with paper liners and fill them three-quarters full with the mixture.
Add some reserved drops on top and bake in a preheated oven at 356°F for about 20 minutes.
In an air fryer, cook them for 11 minutes at 320°F, then lower the temperature to 302°F and continue cooking for another 4 minutes.
