Cookie and Cream Tile

Ingredients

  • 10.5 oz Digestive biscuits
  • 4 Egg yolks
  • 5 tablespoons Sugar
  • 4 tablespoons Flour
  • 2 1/3 cups Milk
  • Vanilla essence (1 vial)
  • 2 Espressos
  • Unsweetened cocoa powder

Preparation of the Cookie and Cream Tile

  • Heat 2 cups of milk with the vanilla essence.
    In a heavy-bottomed saucepan, away from the heat, beat the egg yolks with 4 tablespoons of sugar until you get a smooth mixture.
    Add the flour and incorporate it into the mixture.
    Add the hot milk slowly, stirring constantly to avoid lumps.

  • Place the mixture on the stove over low heat and stir constantly until the cream thickens.
    Turn off and transfer the cream to a large dish, cover it with cling film directly on the surface, and let it cool.
    When the cream is cold, mix the coffee with the remaining milk and sugar in a small bowl.

  • On a serving plate, place a first layer of cookies quickly dipped in the coffee-milk mixture.
    Cover with a few spoonfuls of cream and a sprinkle of unsweetened cocoa.
    Make a new layer of dipped cookies, one of cream, and a little unsweetened cocoa.

  • Continue like this, until you run out of ingredients, finishing with a layer of cream and a generous sprinkle of unsweetened cocoa.
    Let the cookie and cream tile rest for a few hours before serving.
