The baked savory pancake is an easy, quick, and delicious recipe, a cross between a crepe, a pancake, and a rustic fritter, but baked in the oven. Some time ago I made the sweet pancake and the apple one and many of you asked for the savory version, so here it is for you. Soft, tasty, delicious, with a crunchy crust, the baked savory pancake is perfect as an appetizer or main course, the batter is prepared in one minute and you can enrich it as you prefer, it is tasty and very good, it will be loved by both adults and children!

Ingredients

  • 1.67 cups milk
  • 1.2 cups all-purpose flour
  • 3.5 oz cooked ham
  • 3.5 oz scamorza cheese
  • 2 tbsps extra virgin olive oil
  • 2 eggs
  • to taste salt
  • to taste black pepper

Steps

  • The baked savory pancake is very simple and quick to prepare: first, put the milk, eggs, extra virgin olive oil, flour, salt, and black pepper in a bowl and mix well until you get a smooth batter without lumps.

  • Transfer the batter to a non-stick baking tray, slightly greased with oil, and place the diced cooked ham and grated scamorza cheese on top using a large hole grater (the one used for grating cheese flakes).

  • Bake the savory pancake in a preheated oven at 392°F for about 25 minutes until golden brown.

  • Remove the savory pancake from the oven, cut it into pieces and serve.

Tips:

The baked savory pancake can be stored at room temperature for a few hours or in the fridge for a couple of days. You can customize it with your preferred ingredients, adding other cold cuts, vegetables, cheeses, or even leaving it simple, then seasoning or enriching it after cooking. For a lactose-free version, use plant-based milk and cheese.
