Ingredients for the low carb cloud cake

  • 2 cups cups 0% fat Greek yogurt
  • 2.5 tbsps tbsps stevia
  • 2 eggs (medium size)
  • 4 tbsps tbsps low glycemic index flour
  • lemon zest (from 1 organic lemon with edible peel)

Preparation of the low carb cloud cake

  • In the bowl, pour the yogurt, eggs, and stevia, and mix with a spoon until you get a very creamy and uniform mixture (you’ll see the yogurt will blend perfectly).

  • Grate and add the grated lemon zest and mix it with the rest of the mixture.

  • Now pour the low glycemic index flour and mix from bottom to top until it is well blended and the mixture is homogeneous.

  • Cut the parchment paper to the size of the tray’s bottom and place it inside the tray (this helps to unmold it more easily when cold).

  • Preheat the static oven to 350°F and in the meantime pour the mixture into the tray, when the oven is hot, bake the cloud cake and cook for 45/50 minutes, once cooked take it out and let it cool completely.

  • During baking, you will see it rise a lot forming a dome, then just like soufflés as it cools down it settles on itself and when it’s completely cold it will have a small edge on the surface that makes it perfect for filling if desired.

ADVICE

The low carb cloud cake is a dessert to be stored in the fridge covered with cling film (obviously when it is completely cold).

You can enjoy it plain or top it with blueberries and other fresh fruit you like.

You can also add on top, if you like, a no added sugar jam, I recommend mango or lemon.

It’s also great garnished with peanut butter or dark chocolate if you like.

If you want, you can enrich it with fresh mint leaves.
