The stuffed potato boats without oven are a real smart idea that really surprised me, I wanted to try but I wasn’t convinced, and they turned out perfectly, without oven so no sweating in the kitchen during this hot period, they are great.

Ingredients for the stuffed potatoes without oven
- 3 potatoes
- 2.5 oz Carnaroli rice
- 2 sausages
- 1 red bell pepper
- 1 bunch parsley
- 2 pinches salt
- 2 pinches pepper
- 1 tbsp extra virgin olive oil
Preparation of stuffed potatoes without oven
Prepare the stuffed potatoes without oven by peeling the potatoes if they are not new potatoes that can be eaten with the skin.
Cut them in half lengthwise and cook them for no more than 10 minutes in plenty of lightly salted water.
Drain them, dry them, and empty them inside leaving a border of just over 1/2 inch.
Heat 2 tablespoons of oil in a large pan that can hold the potato halves.
When hot, place the potatoes cut side down and leave to brown, gently turn them over and let them brown on the other side.
Add a finger’s width of water to the pan, lower the heat, cover with a lid, and cook for 10 minutes, checking that it doesn’t dry out too much.
In the meantime, cook the rice and drain it, crumble the sausages removing the casing.
In a small pan, heat 1 tablespoon of extra virgin olive oil and soften the finely chopped red bell pepper for 5 minutes, then add the sausages.
Stir often and cook everything for 10 minutes, season with salt, pepper, and chopped parsley.
Now that everything is ready, mix the cooked and drained rice with the sausages.
Take the cooked and browned potato halves and stuff them with plenty of filling, making a nice mound.
Place them back in the pan over low heat with a lid for another 5 minutes to further enhance the flavor.
How to store stuffed potatoes without oven
The stuffed potato boats without oven can be stored in the refrigerator for 2 days in an airtight container.
You can freeze them after they have cooled down.
