Meatloaf with Instant Pot

Meatloaf with Instant Pot is a variation of my classic Meatloaf with Eggs, cooked with the multicooker. If you don’t have the multicooker yet, I recommend reading my Instant Pot Guide to clear up your doubts.

A really delicious main course, one of the Italian Recipes with Instant Pot similar to the Pork Meatballs with Instant Pot although, for this recipe, I used ground beef.

The meatloaf with Instant Pot is delicious on its own, but I recommend serving it accompanied by Side Dishes with Instant Pot such as Mashed Potatoes in the Instant Pot or Roasted Potatoes with Instant Pot or even Potatoes and Peas in Multicooker.

If you don’t have the instant pot, don’t worry, you can prepare this recipe and then cook the Meatloaf in Air Fryer or the Meatloaf in Jar Cooking.

Ingredients

  • 1.1 lbs ground beef
  • 2 cups breadcrumbs
  • 1/4 cup milk
  • 4 tbsps grated Parmesan cheese
  • 2 eggs
  • 2 sprigs parsley
  • 1 clove garlic
  • 8.5 oz spinach (cooked and squeezed)
  • 5.3 oz provola cheese (or scamorza)
  • 2.8 oz cooked ham (or mortadella)
  • 4 eggs (hard-boiled)
  • salt
  • pepper
  • 1/2 cup white wine
  • 2 tbsps butter
  • 1 leek
  • extra virgin olive oil

  • 1 multicooker with oven lid

How to Prepare Meatloaf with Instant Pot

  • In a large bowl, mix the ground beef, breadcrumbs, milk, two eggs, and grated cheese.

    Give a first stir with a spoon to combine the ingredients, then season with chopped garlic and parsley, salt, and pepper.

    Knead with your hands to get a homogeneous and well-mixed dough.

    Meanwhile, cook the hard-boiled eggs and spinach. When the spinach is cooked, squeeze well to remove excess water.

    Also grate the provola cheese with a coarse grater.

    Take a sheet of parchment paper and place it on the work surface. Divide the meatloaf mixture into two equal parts and, after shaping it into a ball, roll it out on the parchment paper.

    Shape the meat into a disk.

    Fill the meatloaf with half of the ham slices.

  • Then add half of the grated provola, half the spinach, and two of the four hard-boiled eggs in the center.

  • Close the disk, compacting well with your hands and giving it the oval shape, typical of meatloaf.

    Set aside the first meatloaf and prepare the second meatloaf the same way with the remaining ingredients.

    Pour the butter and oil into the instant pot.

  • Clean, peel, and slice the leek, place it in a colander and wash well, then pat dry with a towel.

    Heat the oil with the butter at 356°F using the oven function.

    Place the meatloaves inside the instant pot and brown for a couple of minutes.

  • Add the chopped leeks and brown for another two minutes, adjusting the salt and deglazing with white wine.

    Let the white wine evaporate for a minute, then turn off.

  • Close the multifunction pot with the oven lid and start cooking both meatloaves at 320°F for 20 minutes.

    At the end of cooking, let the pot rest closed for 10 minutes.

    After a few minutes, remove the lid, slice the meatloaves, and serve them with your favorite sides, accompanied by their cooking juices.

  • You can substitute ground beef with ground chicken and turkey.

    You can substitute spinach with Swiss chard or broccoli rabe depending on the season.

    Use a nonstick pot to prevent meatloaves from sticking to the bottom

    Alternatively, you can place the meatloaves on a nonstick baking tray that you will place inside the instant pot.

    I recommend buying a multicooker with a nonstick pot because, over time, food tends to stick to stainless steel pots.
