Ingredients

  • 9 oz stale bread
  • 3/4 cup milk
  • 7/16 cup water
  • 2 eggs
  • 2.1 oz Grana Padano, grated
  • 1 pinch fine salt
  • 1 pinch pepper
  • 1 tsp rosemary (scant)
  • 1 tsp thyme (scant)
  • 1 tsp marjoram (scant)
  • 1 tsp savory (scant)
  • 1 tsp chives (scant)
  • 2 pinches garlic powder

  • 1 Hand Blender
  • 1 Ice Cream Scoop
  • 1 Air Fryer
  • 1 Scale
  • 1 Small Bowl
  • 1 Air Fryer Paper

Preparation of Bread Meatballs with Herbs

  • Coarsely chop the bread and put it in a large bowl.

  • Wet it with 3/4 cup of milk and 7/16 cup of room temperature water.

    Cover and let it rest for about half an hour.

    After the first 15 minutes, give it a stir to evenly wet the bread.

  • After 30 minutes, add the eggs to the bread mixture and blend everything with an immersion blender.

  • Once blended, add the grated cheese and give it a stir.

  • Then add all the herbs and mix well to combine everything.

  • Now form balls about the size of ping pong balls. You can make them by hand or use an ice cream scoop.

    Pour some breadcrumbs into a small bowl and bread the meatballs.

    Then let them rest for about ten minutes.

  • Then transfer them to the air fryer and cook them at 392°F for 15 minutes, turning them halfway through.

  • And voilà… the bread meatballs with herbs are ready to be served and enjoyed, perhaps with some accompanying sauces.

Useful Tips

I used common white bread, but you can easily use multigrain bread, wholemeal bread, or a mix of different breads.

Use the herbs you like best and in the quantity you desire.

After the 30 minutes of rest, check that the bread is nicely soft; if it is still hard, add a few tablespoons of water.
