How to Prepare Pasta with Zucchini Cream, Cherry Tomatoes, Ricotta, and Crispy Bacon
Cut the zucchini into cubes.
In a large frying pan, heat the extra virgin olive oil and sauté the zucchini over medium heat for about 10 minutes, stirring occasionally.
Add the washed and chopped cherry tomatoes, season with salt, and continue cooking for another 10 minutes until everything is soft and well-flavored.
Transfer half of the zucchini and cherry tomato mixture into a blender glass.
Add the ricotta and a drizzle of oil. Blend until smooth and creamy.
In another pan, without adding oil, sauté the bacon cubes on high heat until crispy. Set aside.
Cook the pasta in plenty of salted water, drain it al dente, and transfer it to the pan with the remaining zucchini and cherry tomato mixture.
Add the zucchini, cherry tomato, and ricotta cream. Mix well to combine the flavors.
Serve the pasta hot, topping with the crispy bacon cubes.
Storage
The pasta can be stored in the refrigerator, sealed in an airtight container, for up to 1 day. It is recommended to reheat it in a pan with a splash of milk or hot water to regain creaminess. Not suitable for freezing due to the presence of ricotta.
