Whole Wheat Sugar-Free Apple Cake

The whole wheat apple cake without sugar and butter is a real treat without guilt, and if you are looking for a healthier alternative to the delicious classic apple cake, this cake is the perfect solution.
Soft, light, and sweet thanks to the apples, it is a delicious recipe, a perfect apple cake for a healthy breakfast or a genuine snack, suitable for those following a diet with reduced sugar and fat consumption. Indeed, instead of refined sugar, I used the sweetener erythritol and replaced the butter with sunflower seed oil. Additionally, to prepare the batter, I used my Bimby kitchen robot.

You can customize it as you prefer, adding a handful of chopped walnuts or almonds for a crunchier touch, or flavoring it with ginger or vanilla. For a vegan version, you can replace the eggs with a mashed banana.

Ingredients for the Whole Wheat Sugar-Free Apple Cake

  • 2 apples
  • 1 3/4 cups whole wheat flour
  • 2 eggs (Medium size)
  • 1/2 cup erythritol
  • 1/3 cup plant-based milk (almond, hazelnut, or oat)
  • 1/3 cup sunflower seed oil
  • 1 lemon zest (Grated)
  • 1 packet baking powder
  • 1 tsp ground cinnamon
  • to taste lemon juice (for the apples)

How to Make the Whole Wheat Sugar-Free Apple Cake

  • First of all, I wash the apples, peel them, remove the core, and cut them: one into slices and the other into pieces. I drizzle them with the juice of a lemon to prevent them from browning.
    In the bowl, I put the eggs and erythritol and run for 30 sec/speed 4. I add the oil and plant-based milk: 20 sec/speed 3. Then I pour the whole wheat flour, baking powder, grated lemon zest, and ground cinnamon and start for 30 sec/speed 4.

    Finally, I add the chopped apple, start the Bimby in reverse mode for 1 min/speed 1.
    I pour the batter into the 8/9-inch springform pan lined with parchment paper, or you can grease it with seed oil or use a cake release. I arrange the remaining apple slices on the surface and bake in a preheated static oven at 350°F for about 40/45 minutes. Let it cool before removing it from the pan.
