Ingredients

  • 1 cup oat flour (or finely ground oats)
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Half teaspoon ground cinnamon
  • 5 tablespoons brown sugar (packed)
  • 1 pinch salt
  • 1 egg (medium, at room temperature)
  • 3 1/2 tablespoons vegetable oil
  • 2 oz walnut kernels (about 1/2 cup chopped)
  • 2 tablespoons milk (if needed)

For the oat flour and walnut cookies you will need

  • 1 Mixer
  • 1 Bowl
  • 1 Sieve
  • 1 Whisk
  • 1 Spoon
  • 1 Baking sheet
  • Parchment paper

Preparation — oat flour and walnut cookies

  • If you use rolled oats, finely grind them in a mixer.

    In a bowl, combine the oat flour, all-purpose flour, brown sugar, baking powder, salt and cinnamon and mix.
    Add the egg and the oil, then mix with a spoon.
    If the dough is too dry, add a couple of tablespoons of milk until you obtain a soft but moldable consistency.

  • Fold in the chopped walnuts and mix until evenly distributed.

    Take small portions of dough weighing about 1.4 oz (40 g), roll them into balls and place them, slightly spaced apart, on a baking sheet lined with parchment paper. Flatten them slightly.

  • Bake the oat flour and walnut cookies in a preheated conventional oven at 356°F for 15 minutes, until golden.
    Remove from the oven and let them cool completely. They will become crunchy on the outside and slightly soft inside.
