Ingredients

  • 1 apple
  • 1 egg (medium at room temperature)
  • 3 oz sugar (about 1/3 cup)
  • 4 tbsp sunflower oil (about 1/4 cup)
  • 1/3 cup milk (at room temperature)
  • 1 1/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 pinch salt
  • 1 tbsp brown sugar (for the surface)

For the apple air fryer muffins you will need

  • 1 Air fryer
  • 8 Cupcake liners
  • 1 Bowl
  • 1 Whisk
  • 1 Sieve

Preparation of apple air fryer muffins

  • Place the egg and the sugar in a bowl and whisk together by hand. Add the oil and the milk and mix well to incorporate them.

    Add the sifted flour together with the baking powder, the salt and the cinnamon.

  • Mix until you obtain a smooth batter.
    Add the apple diced into small cubes and fold it in with a spoon.
    Portion the batter into the muffin liners (fill them about 2/3 full). Sprinkle the surface with a little brown sugar to create a crunchy top.
    Place the liners in the air fryer basket and bake at 320°F (gentle/low mode) for 13-15 minutes. Check doneness with a toothpick.

    You can bake them in a conventional oven at 356°F for 18 minutes.

  • Let the apple air fryer muffins cool on a rack and serve warm or at room temperature with a dusting of powdered sugar.
