The STUFFED POTATO ROLL is a simple yet showy main course or one-dish meal, perfect for a family dinner or a special lunch. The base, prepared with boiled mashed potatoes, eggs and grated cheese, becomes a soft, compact dough that holds a melty center of cheese and the savory flavor of cooked ham.
Once rolled and baked, the potato roll appears golden and crisp on the outside, while inside it yields soft, stringy slices that win you over at the first bite.

Easy to customize with other fillings, it’s a versatile recipe that appeals to both adults and children and can also be prepared in advance and reheated when ready to serve.

Ingredients

  • 28 oz potatoes
  • 2 eggs (medium)
  • 2 oz grated Parmesan
  • 4 tbsp breadcrumbs
  • 1 1/2 tbsp butter
  • 1 bunch parsley
  • to taste salt
  • to taste black pepper
  • to taste nutmeg
  • 7 oz cooked ham
  • 5 oz provolone (scamorza or another melting cheese)

For the stuffed potato roll you will need

  • Pot
  • 1 Potato masher
  • 1 Bowl
  • Parchment paper
  • 1 Baking pan

Preparation of the stuffed potato roll

  • To prepare the stuffed potato roll, start by boiling the potatoes. Wash them under running water, then place them in a pot covered with salted water. Put over the heat and cook until they soften, about 25-30 minutes.
    Once the potatoes are cooked and warm, peel them and mash them with a potato masher into a large bowl.

    Add the eggs, the butter, the Parmesan, the chopped parsley, the nutmeg, the salt, the pepper and, finally, the breadcrumbs.
    Mix everything together and, if the mixture still seems too soft, you can add another tablespoon of breadcrumbs.

  • Lay a sheet of parchment paper, butter it and sprinkle it with breadcrumbs, then place the mixture on it and, with the help of another sheet of paper or with wet hands, press it until you obtain a rectangle.
    Arrange the cooked ham and the slices of cheese over the potatoes.

    Very gently, using the paper to help you, roll up the rectangle.

  • Seal well by pressing the ends and shape it like a classic meatloaf. Tie the two ends tightly with kitchen twine.

    To prevent it from opening during cooking, you can wrap it both in parchment paper and in aluminum foil.

  • Place the potato roll in a baking pan or on a baking sheet and bake in a preheated conventional oven at 356°F for 30-40 minutes.
    Once the time has passed, remove from the oven and let it cool slightly.

    Serve the potato roll in slices about 3/8 inch thick.
