The FRIGGITELLI STUFFED WITH MEAT are an easy and quick dish to prepare. You can serve them as an appetizer or, in larger portions, as a complete main course, a single-course meal or, why not, as a side dish.

Friggitelli, for those who don’t know them yet, are a small green variety of pepper with a rather sweet flavor. Like their red and yellow pepper cousins, they are not spicy and are very popular in the traditional cuisine of Campania.

They are a very versatile vegetable, suitable for many preparations in the kitchen; in fact, they can simply be fried and served hot for a very tasty side dish.

Ingredients

  • 12 friggitelli peppers
  • 2/3 lb ground beef
  • 2 slices sandwich bread
  • 1/3 cup Parmesan cheese (grated)
  • to taste thyme
  • lemon zest
  • as needed milk
  • to taste salt
  • to taste black pepper
  • as needed extra virgin olive oil

Steps

  • To prepare the FRIGGITELLI STUFFED WITH MEAT make the filling. In a bowl combine the ground beef with the bread soaked in milk and squeezed, the Parmesan, lemon zest, thyme, salt, pepper and mix well.

    Wash and dry the friggitelli, cut them about 3/8 inch from the stem, remove the seeds, make a small hole at the tip so they don’t burst while cooking, and lightly salt the inside.

  • Fill them with the mixture using a teaspoon, close them with the stem and secure with a toothpick.

    Arrange the friggitelli in a baking pan, drizzle them with oil, season with salt and bake at 356°F for about 20-30 minutes, depending on their size.

  • Serve your FRIGGITELLI STUFFED WITH MEAT hot.
