Fried eggplant pizzaiola baked in the oven is a true delight, perfect to serve as an appetizer or with a main dish.

Fried eggplant pizzaiola is a substitute for the classic grilled eggplant pizzaiola, an even more appetizing version, as we know it is hard to resist fried eggplant.

This recipe is also perfect for recycling leftover fried eggplant from other preparations, in this case if they are cold, heat them for a few minutes in a preheated oven and then season them.

Ingredients for Fried Eggplant Pizzaiola Baked in the Oven:

  • 1 long eggplant
  • to taste fine salt
  • to taste oil for frying
  • to taste tomato sauce
  • 1 tbsp extra virgin olive oil
  • to taste dried oregano
  • to taste fine salt
  • to taste pizza mozzarella

Steps for Preparing and Cooking Eggplant Pizzaiola:

  • Prepare the fried eggplant, following the procedure HERE.

  • Place the fried eggplant slices in a non-stick baking pan (no need for parchment paper), then in a bowl, mix the tomato sauce (a scant tablespoon per eggplant slice), extra virgin olive oil, salt, and oregano, and mix well.

    On top of each eggplant slice, put a scant tablespoon of seasoned tomato sauce (adjust based on the size of the eggplant slices), add pizza mozzarella or fresh mozzarella after drying it well, and sprinkle with dried oregano.

  • Put the baking pan in a preheated oven at 392°F for a few minutes until the mozzarella is melted.

    Serve your eggplant pizzaiola hot.

    You can also cook the eggplant pizzaiola in an air fryer at 356°F on grill function.

Tips:

You can also fill the eggplant slices and then place another slice on top, applying slight pressure to make them stick well and then bake them for about 65 minutes at 356°F.
