Ingredients

  • 2.2 lbs rabbit
  • 1 golden onion
  • 1 clove garlic
  • Half glass white wine
  • 20 cherry tomatoes
  • to taste Taggiasca olives
  • 1 sprig rosemary
  • 1 leaf bay leaf
  • to taste dried oregano
  • 2 cups water
  • to taste extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

  • In a sufficiently large pan, add a drizzle of oil, the garlic clove and the sliced onion. Gently sauté everything for a few minutes. Add the rabbit cut into pieces, the rosemary and the bay leaf, and brown everything until golden. Deglaze with the white wine and let the alcohol evaporate.

  • Season with salt and pepper and add the water.

    Cook the rabbit slowly over low heat for about 30 minutes, occasionally moistening with additional water if needed. Then add the olives and cherry tomatoes and continue cooking for another 30 minutes.

    When cooking is almost complete, add the dried oregano and let it infuse for a few minutes.

  • Turn off the heat and serve your braised rabbit accompanied by the side dish you prefer.

VARIATIONS

This dish can be customized according to taste and available ingredients. You can use different types of wine, add spices like chili pepper for a spicy touch, or enrich the sauce with various types of mushrooms and vegetables.
