Tasty Christmas crostini with lumpfish roe and olive pâté… they are quick to prepare and perfect for the holiday table, as an appetizer or with aperitifs. Lumpfish roe is an economical alternative to caviar and is easily found in supermarkets, alongside smoked salmon and other preserved fish. The recipe is very easy, but also very nice to present, thanks to the color contrast between the red roe and the dark olives. Ingredients
- 4 slices whole wheat sandwich bread (or white sandwich bread)
- 3.5 oz cream cheese (Philadelphia or Robiola)
- 1.4 oz lumpfish roe (caviar substitute)
- 1.8 oz black olive pâté
- herbs (to taste)
Ingredient quantities are approximate; you can increase or decrease them according to your taste.

Preparation
Cut the slices of sandwich bread into small cubes: I made 4 crostini from each slice, but you can make them larger if you prefer.
Heat a non-stick grill pan and toast the crostini on both sides, it will take just a few seconds.
Spread each cube with cream cheese, then add the lumpfish roe and olive pâté.
If desired, you can add some leaves of marjoram, thyme, or other herbs.
The Christmas crostini with lumpfish roe and olives are ready, arrange them on a tray and serve them as an appetizer.
Tips and Variations
You can use whole wheat or white sandwich bread, white bread, or slices of stale bread. You can cut crostini into squares, triangles, or shapes like stars or trees.
You can spread the crostini with Philadelphia, Robiola, or softened butter.
You can use red (as in the photo) or black lumpfish roe, or caviar (which obviously is much more expensive).
You can add a little grated lemon zest on top.
