Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 sachet instant baking powder for savory preparations
  • 3/4 oz Parmesan (grated)
  • black pepper
  • 3 eggs
  • 1/2 tsp salt
  • 7 tbsp sunflower oil
  • 1/3 cup milk
  • 2/3 cup plain yogurt
  • 5.3 oz mortadella (diced)
  • 3.5 oz salami (diced)
  • 4.1 oz caciocavallo (or spicy provolone)
  • 3/4 oz almonds

YOU WILL NEED FOR THE QUICK SAVORY COLOMBA

  • 1 Mold for 750 g colomba
  • 2 Bowls
  • 1 Sieve
  • 1 Whisk

Preparation — Quick Savory Colomba

  • In a large bowl place the sifted flour and baking powder, add the Parmesan, black pepper and mix.

    In another bowl, quickly whisk the eggs with the salt and add the sunflower oil, the milk and the yogurt (not cold from the fridge).

  • Pour the liquid mixture into the dry ingredients and mix. Finally add the mortadella, the salami (reserve a little) and the diced caciocavallo and fold them in well.

    Transfer the batter into a 750 g colomba mold, level the surface and decorate with the remaining cold cuts and the almonds.

  • Bake the quick savory colomba in a preheated conventional oven at 356°F for 45 minutes. Check doneness with the classic toothpick test.

    Once baked, remove from the oven and let cool completely before serving.

STORAGE

The quick savory colomba keeps well at room temperature for 3-4 days.

You can also decide to freeze it: simply cut it into slices and place them in freezer bags. To enjoy, reheat the slices in the oven or thaw them in the refrigerator.
